Zucchini Potato Fritters With Roasted Pepper Mayo

The heaviest I’ve ever been was 54 kg (119 lb).

Just in case you’re wondering…. I’m 5″5 ish. I literally typed that, grabbed a measurement tape and went ahead and measured myself just to be sure.

So at 168cm, 54 kg isn’t terribly bad. No one’s going to tell me in my face that “I’m prosperous” (That’s how they attempt to tell you that you’ve put on weight). But there’s plenty of fun for everyone to pinch my cheeks and slightly flabby arms and tummy. Not that anyone would want to pinch my tummy. Never mind that.

At the peak of my weight, my stomach issues too peaked. I got really sick, had digestive problems… and my weight plummeted to 44 kg within two years. All that thanks to no fatty fried food, no soda, no fast food and just plenty of vegetables.

It took me a good couple of years to regain my health and my weight. Not being able to eat fried chicken was pure torture.. honestly it was the worst two years of my life. On the other hand though, I was given the opportunity to experience what it felt like to have awesome bowel movements from eating 95% greens which I wouldn’t have voluntarily done so.

So on days that my body just feels bleh (which I should mention that I also learned how to listen to my body in those horrendous two years), I’d naturally crave something light…. like these Zucchini Potato Fritters. Ok fine. It’s not THAT light… but compared to fried chicken and chocolate cake for dessert, this is plenty light.

These fritters are deliciously golden crispy on the outside, soft and moist on the inside. It’s packed with flavor and when paired with roasted pepper mayonnaise. It’s to die for. Ok ok ok mayo is definitely NOT light. But we always need balance in life right? Moderation is key? Light and heavy. Vegetables and Mayo.

Yes?

At least there’s yogurt in there somewhere. When there’s yogurt, there’s healthy. Period.

Zucchini Potato Fritters With Roasted Pepper Mayo

Ingredients
  • Fritters
  • 2 medium russet potatoes, grated and placed in water to avoid discoloration
  • 2 zucchini, grated and drained off excess water
  • 1 medium onion, finely diced
  • 6 garlic cloves, finely minced
  • 2 large eggs
  • 3 tbs bread crumbs
  • 2 tbs all purpose flour (or whole wheat flour)
  • ½ tsp baking powder
  • 1¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp thyme
  • ¼ tsp rosemary
  • ¼ tsp dill
  • ¼ tsp oregano

  • Roasted Pepper Mayo
  • ¼ cup roasted red pepper
  • ¼ cup mayonnaise
  • ¼ cup plain yogurt
  • ⅛ tsp lime juice
  • Salt and pepper to taste
  • Touch of cayenne powder
Directions
Fritters
  1. Heat a pan over medium high heat and add a thin coat of oil. When the pan is hot, fry the onions until they're soft. Add the garlic and fry until they're lightly brown. Set aside and let cool.
  2. Combine the grated potatoes and zucchini with the onion and garlic. Add the eggs, breadcrumbs, flour, baking powder, salt, pepper and herbs. Mix well. Because we're adding salt here, some liquid will come out. No sweat, just drain it.
  3. Heat the same pan over medium heat and add ⅛ - ¼" oil. Scoop ¼ cup of batter into the pan and flatten it a little depending on how thin or thick you like them.
  4. If you want to, you can test fry a small batch and adjust seasoning if necessary.
  5. Fry the fritters in batches about 1½ - 2½ minutes on each side until brown and crisp. Dont touch them while they fry. Place them on a wire rack set over a baking sheet. Place them in the oven at 200 F to keep warm while you fry the rest if you want to.
Roasted Pepper Mayo:
  1. Combine all the ingredients for 'roasted pepper mayo' in a blender or food processor and puree until smooth. Taste and adjust seasoning.

Lol Amanda. It looks like a lot but really it’s simply pantry items. I think you’ll faint when you see other recipes of mine like chicken biryani. :p And yes, you’ve got to make these fritters… and the biryani too when you’ve broken your rules. They’re so delicious. :p

YUM these fritters look gorgeous! Love how they are light and crispy, and those mayo and yogurt splatters are the bomb. Good to hear that you are back to eating fried chicken now too – couldn’t handle being deprived of that!! 🙂
