Zucchini Potato Fritters With Roasted Pepper Mayo
 
 
Delicious golden fritters crispy on the outside, soft & moist on the inside. Packed with flavor & paired with roasted pepper mayonnaise

Ingredients
  • Fritters
  • 2 medium russet potatoes, grated and placed in water to avoid discoloration
  • 2 zucchini, grated and drained off excess water
  • 1 medium onion, finely diced
  • 6 garlic cloves, finely minced
  • 2 large eggs
  • 3 tbs bread crumbs
  • 2 tbs all purpose flour (or whole wheat flour)
  • ½ tsp baking powder
  • 1¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp thyme
  • ¼ tsp rosemary
  • ¼ tsp dill
  • ¼ tsp oregano
  • Roasted Pepper Mayo
  • ¼ cup roasted red pepper
  • ¼ cup mayonnaise
  • ¼ cup plain yogurt
  • ⅛ tsp lime juice
  • Salt and pepper to taste
  • Touch of cayenne powder

Fritters
  1. Heat a pan over medium high heat and add a thin coat of oil. When the pan is hot, fry the onions until they're soft. Add the garlic and fry until they're lightly brown. Set aside and let cool.
  2. Combine the grated potatoes and zucchini with the onion and garlic. Add the eggs, breadcrumbs, flour, baking powder, salt, pepper and herbs. Mix well. Because we're adding salt here, some liquid will come out. No sweat, just drain it.
  3. Heat the same pan over medium heat and add ⅛ - ¼" oil. Scoop ¼ cup of batter into the pan and flatten it a little depending on how thin or thick you like them.
  4. If you want to, you can test fry a small batch and adjust seasoning if necessary.
  5. Fry the fritters in batches about 1½ - 2½ minutes on each side until brown and crisp. Dont touch them while they fry. Place them on a wire rack set over a baking sheet. Place them in the oven at 200 F to keep warm while you fry the rest if you want to.
Roasted Pepper Mayo:
  1. Combine all the ingredients for 'roasted pepper mayo' in a blender or food processor and puree until smooth. Taste and adjust seasoning.
