Exploring Life Through The Lens

Blueberry Chipotle BBQ Wings

This post is sponsored by Honest Cooking and the U.S. Highbush Blueberry Council.

If you’re familiar with my rants… my freezer space rant to be exact, you’ll know that I always feel like I never have enough freezer space. With freezer space limited, I carefully choose what’re deserving to take up the precious space.

Frozen fruit has proved itself to be worthy of the space. Fresh fruit doesn’t last long in room temperature. Besides, who has the time to go grocery shopping every other day? Frozen fruit is the answer.

This time around, I had frozen blueberries in my freezer.

Crispy and juicy wings tossed in a blueberry BBQ sauce that has the perfect balance of savory, spicy, sweet and tangy.

Growing up in Malaysia, I had my share of mangoes, rambutans, durians, mangosteens, papayas and plenty other tropical fruits. However, I rarely had blueberries. Now that I’m in Los Angeles, I’m in blueberry heaven for they are in abundance here. Not only are the fresh ones available year-round, I can always count on getting them frozen. And they’re deliciously sweet.

I love blueberries. They’re so versatile because not only can they be used in sweet dishes but also in savory ones. From making blueberry syrup, compote or filling to blueberry sauce for grilled cheese, pizza or grilled meat. Or simply just toss whole blueberries into salads, tacos and baked goods like breads, bagels or scones. The sky’s the limit, really.

Besides, we all know how much blueberries are good for health. In fact, blueberries have one of the highest antioxidant capacities among all fruits and vegetables. I can’t think of a more perfect fruit to include in meals especially now during the holiday season.

Going back to my freezer issue, I’d like to add that I also had three large bags of chicken wings that have been hogging my freezer space for the longest time. It’s time to move them from there to my tummy. As mentioned, I had some frozen blueberries on hand and there were also some chipotle peppers laying around doing absolutely nothing in the freezer.

Craving for some BBQ-ish sauce on the wings, it was an instant decision to cook up these Blueberry Chipotle BBQ Wings. Crispy and juicy wings tossed in a BBQ sauce that has the perfect balance of savory, spicy, sweet and tangy. Adding blueberries to a regular BBQ sauce gives it a delicious twist and will have people obsessing about it for a long time.

What’s more, it’s so easy and quick to prepare this dish with common pantry items and can serve plenty as an appetizer. Win win win.

So what you waiting for? Grab a frozen bad of frozen blueberries from the store and makes these.

What a genius dish! I’m loving the sweet and spicy glaze on the chicken, and what a wonderfully rich color! I’m certain it’s equally rich in taste!

Honestly, the only reason why there’s spicy in there is because I couldn’t stop at blueberry bbq wings. I just had to include something spicy in a predominantly sweet glaze. I’m a spicy girl after all. 🙂 The color was wicked for me too… love it.

Wow I never thought of mixing blueberry with chipotle. I’m intrigued!

Me neither… until I tried it. It works. Really good. There’s a ton of blueberries in the recipe yet the flavor’s subtle. My hubs can’t take too much heat, so it’s just a little over mild in terms of heat. If it was up to me, I’d up it a couple of notch. :p

Blueberry and chicken wings. I’ve never thought the two would go well together. This is such a crazy creative recipe! I can only imagine what super combinations you’d come up with if tropical fruits were more widely available in the US. 🙂

Ummm, HELLO delicious! I LOVE wings, but a blueberry-chipotle-BBQ smothered wing? GIMME DAT! These look beyond delicious! Only problem, I could and will eat a entire vat of these crispy, crunchy, sweet and spicy delicious bad boys! Well, not really a problem since I don’t plan on sharing!! Pinned! Cheers – to making room in our freezer by filling our bellehs!

Yes, I’m always for making room in the freezer to fill them tummies. It’s the only logical thing to do. 🙂
