Chocolate Chia Pudding

I could tell you that I came across a recipe for chocolate coconut pudding and decided to try it, but I’m not. Truth is, I was walking down the street, minding my own business when suddenly, a stranger shouted ‘CHOCOLATE PUDDING!’ and shoved them into my face. They got stuck in my nose and mouth and I couldn’t breathe. Someone called the ambulance and I was in the hospital in no time. The doctors worked on me and sucked all the pudding out. 3 minutes later, I was breathing again. Couple of hours later, it was lunch time at the hospital and guess what was dessert? You betcha, chocolate pudding!

I wish the story was true. At least in my head it was.

Fine. Let me tell you the boring truth.

I did find a recipe online. It called for cocoa powder, coconut sugar, coconut milk and chia seeds. All I had on hand was chia seeds. Bad news. But the good news was, I had chocolate chips, cane sugar, maple syrup and almond milk on hand. Good enough.

I made it. Put it in the fridge to ‘let it set’. While we wait for the result, I want to take a moment to talk about pudding.

What is pudding?

#1 A custard like dessert.

#2 A gelatin bouncy bounce like  jello.

#3 A creamy, thick liquidy thing.

For me, pudding is #1.  So when the recipe said ‘let it set’, I thought that my pudding would BECOME a beautiful custard like yummy dessert. I waited. And waited some more. I decided to Google Image “pudding” just to be sure. Have you ever Google Image this word? O.M.G. The deceit. The confusion. This did nothing to help. But then I remembered someone on TV making edible paint made out of pudding. Ah Ha! So, apparently, there are different types of pudding. This explains everything.

So my wait was over. I tried a bite of my chocolate chia pudding. Oh, wow. It was fabulous! Mr. V didn’t like it, but who cares. Me and eight other people I guinea-pigged did.

It was so delicious. At first, we didn’t know who made it. But when we tasted ‘healthy’ in there, we knew it was you. – one of the guinea pigs

Since I substituted 4/5 of the ingredients and adjusted the ratio, that means in theory, I came up with this, right? My recipe. My pudding. After all that pudding trauma, I mean… drama.

Chocolate-Chia-Seed-Pudding

 

Quick recipe     Serves 2

what you need:

1 cup almond milk (or any of your favorite milk)
1/4 cup semi sweet chocolate chips (or 3 tbs cocoa powder)
1/3 cup chia seed (more or less depending on how thin/thick you like your pudding)
1 tbs maple syrup (or any sweetener)
1 tbs cane sugar (optional)

directions:

  1. Put all ingredients in a blender. Blend on high until chia seed is no longer grainy.
  2. Eat it right away or refrigerate for 2 hours to overnight to set. Eat as is or with any favorite topping (bananas, whipped cream, fruit, more chocolate chips or grated chocolate)
