Maple Mustard Meatballs

I’m a food blogger.

You’d think that there’s always food in the kitchen. Or the refrigerator.

Most of the time, there is.

But on some days, I just can’t seem to get my grown up ass out of bed to brush my teeth let alone make lunch. I meant breakfast.

On some days, the fridge looks like it’s crudely inviting me to play the hunger games. The shelves are bare and empty that we literally can fit a dead body in there.  At least parts of a dead body… after the hunger games.

Juicy & tender meatballs tossed in the perfect balance of sweet, spicy & tangy sauce.  So simple. So delicious.

The tummy always prevails and I’ll have to start scouring for food.

At this point, there’s only one thing to do.

Check the freezer.

It doesn’t look good. A glance and the freezer looks really bleak.

Frozen chili peppers. Unless I’d like to have a tongue-in-distress party. I’m going to skip this.

Frozen cheese. Oh, why is there so much cheese.

I couldn’t give up. I dig deeper. Ok fine, I just removed a bag. My freezer isn’t that big.

And that’s when I saw it. Frozen meatballs. I heat it up, toss it with some common pantry sauces and spices and it is done.

Maple Mustard Meatballs. Perfect balance of sweet, spicy and tangy. Now, off I go back to bed… till the next meal. Yikes.

What food have saved you on a really ‘you being desperate yet lazy’ day?

Maple Mustard Meatballs             Serves 2 as an entree

what you need:

20 small meatballs, cooked

Sauce:
1/4 cup Dijon mustard
1/4 cup maple syrup
2 tsp apple cider vinegar
2 tsp soy sauce
1/2 tsp garlic powder
1/2 tsp cumin
1/4 tsp all spice
1/4 tsp sugar
1/8 – 1/4 tsp habanero hot sauce

directions:

1. Combine the ingredients for the sauce.

2. Toss with cooked meatballs. Serve with any of your favorite side like rice or mash potatoes. You could also serve this as an appetizer.

Note:

Use this glaze for chicken wings, pork chops, baked chicken or fish.
